I'm starting PHAT next week and I've never gone for 3-5 reps so if I put to much weight on the bar or to little should I count them as work sets? Say if I do 100kg bench, but I only get 2 reps, should I count that as a workset and then lower the weight?

start low and find your comfort zone with weights
