I'm trying to get a large back and towering traps and Im trying to figure a way to work them as much as I can without over working..
MONDAY- chest
Tuesday- shoulders/traps
Wednesday- rest
Thursday- legs
Friday- back/traps/arms
Saturday- chest
Sunday- rest/shoulders

You want large back and traps, but I don't see any Deadlifts in your split. Did you just not write them here?

@wannabemuscular I didn't write specific workouts but lots of Deadlifts and rows will be done

Holy triceps. They're being hit either directly or indirectly 5 of 7 days.
And i'm not sure how you have a rest day and still do shoulders, and why you aren't working out your legs at least twice a week.

If you want to make improvements on a body part, prioritize the lift.
Do it on Monday and again later in the week.

I find when part of my body starts lagging or I want to make more drastic improvements, I move it to Monday. If you miss it for some reason, you have the rest of the week to make it up.
