There are a number of advantages listed on his website to keeping to a set time for feeding, but I cant see that it would make a big impact if it's just one day a week!

(there will be some minimal fat from meat, fish etc) On rest days have the same amount of protein and get the rest of your calories from fats, and maybe one meal of carbs.
