Bacon, Egg, Sausage, Cheese, and Broccoli "Muffins".

I'd seen recipes like this before and was always curious to try them. Seemed like a nice easy thing to prep in advance for a quick healthy snack. They stuck to the paper a bit. Next time I think I'll just grease the pan and go without the paper.

They are VERY tasty.

I used egg beaters because I only had 3 real eggs in the house. The store was out of eggs the other day as there was a mad rush before the snow storm.

Funny you mention the egg muffins. Was just about to start making those. Hear they're good in the fridge for about 3 days.

@West165 They're delicious and the possibilities are endless with what you add. The only issue, like I said above, was they stuck to the paper. Probably better with just a greased pan.

Problem with those is i would eat 6 or 7 of them each morning. Seems like a lot of baking effort for 2 meals.

Fried eggs and oatmeal with cinnamon will forever be the best breakfast.

@wannabemuscular definitely wanna grease the pan without the liners.... those are just a nightmare. I make those a lot, perfect for super quick easy breakfast. Though I have to say my favorite thing is banana pancakes (1 banana, two eggs, cinnamon, and 1 scoop chocolate protein powder) with some honey or nutella (which is kind of bad lol)

I'm liking this blog...anything about food is the best thing ever! lol

@emmyweird84 No pancake mix? Just the protein powder as a dry ingredient?

yeah just the protein powder, you don't get much lift to them, but the eggs help out a little in that department. You might want to gauge the powder a little bit because I know not all powder is created equal (different scoop sizes)

A long time ago a buddy and me tried to make protein cookies. I forgot the exact ingredients, except for oatmeal, eggs and chocolate whey, but there was very little sugar. They were horrible so we tried adding apple sauce for some reason. They got worse.

@West165 lol yeah it's like this weird trial and error process with protein powder. You could always add agave syrup or honey to help

I go big on Fridays. Double bacon cheeseburger and potatoe wedges. Burger may be a little much for those cutting, but the potatoe wedges are essential for me year round.

1 onion, 1 pepper, 5 celery ribs, chopped and softened

2 lbs lean beef, browned

Put in crockpot with 2 cans crushed tomatoes, 1 cup water, worschtershire and spice mix to taste and let 'er go.

For last 10 or 15 minutes add in 2 cans of kidney beans.

Meals for days.
